THC Dark Chocolate Cookies
If you’ve read any of our recipe blogs before, you’ll know that we love chocolate. Like, really LOVE chocolate. So, when we had the opportunity to whip up a batch of cannabis infused dark chocolate cookies, we couldn’t resist.
We suggest sprinkling on extra dark chocolate chunks (in addition to the chocolate chips) once the cookies come out of the oven to make these truly decadent. One can never have too much chocolate!
Cannabis Infusion
While there are a few different ways to infuse any recipe with cannabis, we love using cannabutter (cannabis infused butter). It is one of the best ways to ensure equal distribution of the cannabis and gives the cookies a delightful taste and fragrance. You can find our recipe for cannabutter HERE.
As always, remember to test your batch of cannabutter before making the cookies so you know how much to use. You can always mix cannabutter and regular butter if you want lower dose cookies. Once cooked, be sure to start with a small piece of cookie to gauge the potency. Wait 60-90 minutes before having a second dose to ensure that your body has had a chance to absorb the THC before you go inhaling another delicious cookie!
Ingredients
- 1 1/2 cups flour
- 1/2 cup dark cocoa powder
- 1 tsp cornstarch
- 3/4 tsp baking soda
- 1/8 tsp salt
- 1/2 cup butter (a mixture of regular and cannabutter, dependent on your tolerance and preference)
- 3/4 cup brown sugar packed
- 1 egg
- 1 tsp vanilla extract
- Handful of dark chocolate chips and/or chunks
Directions
- In a medium bowl, whisk together the flour, cocoa powder, cornstarch, baking soda, and salt; set aside.
- In a second mixing bowl, cream together the cannabutter, regular butter and brown sugar with an electric mixer until light and fluffy.
- Add the egg and vanilla extract and mix well.
- Add the flour mixture and mix until combined.
- Fold in the chocolate chips.
- Collect the dough in your hands, form into a ball, wrap in plastic wrap and place in fridge for 1 hour until firm.
- Preheat the oven to 350F. Grease cookie sheets or line them with a silicone baking mat.
- Scoop small amounts of the cookie dough out and roll between your hands to form a smooth ball.
- Place the cookie dough on the baking sheet. Bake the cookies at 350F for 8-9 minutes until set. Be sure you don’t over-bake the cookies or they will dry out.
- Remove. Let cool. Enjoy!
