Cannabis Infused Date Squares

When we were thinking about what baked goods we were craving, date squares popped into our minds! The delicious ones your grandma used to make, covered in oat crumble and too good to eat just one. Yea…THOSE date squares!

This recipe for Cannabis Infused Date Squares is easy to make. The date squares freeze great if you want to tuck some away for a rainy day. Or, if you want to eat them all in one weekend, we’re not going to judge you. We may just join you!

Infusion Method

Our recipe for these Cannabis Infused Date Squares uses a cannabutter; you can find our recipe for cannabis infused butter HERE.

Be sure to make and test your batch of cannabutter before incorporating it into the recipe to properly gauge its potency. You will use a mix of regular butter and cannabutter. The amount of cannabutter you use will depend on your personal preference and tolerance level. As long as you use a total of 3/4 cup butter, you can adjust the ratio of butter to cannabutter to suit your needs.

Ingredients

• 1 ½ cups rolled oats
• 1 ½ cups flour
• ¼ teaspoon salt
• ¾ teaspoon baking soda
• 1 cup packed brown sugar
• ¾ cup butter, softened (mix of regular and cannabutter)
• ¾ pound pitted dates, diced
• 1 cup water
• ⅓ cup packed brown sugar
• 1 teaspoon lemon juice

Directions

1. Preheat oven to 350′ F.
2. In a large bowl, combine oats, flour, salt, 1 cup brown sugar, and baking soda. Mix in the butter until crumbly.
3. Press half of the oat mixture into the bottom of a 9 inch square baking pan.
4. In a small pot over medium heat, combine the dates, water, and 1/3 cup brown sugar. Bring to a boil, and cook until thickened. Stir in lemon juice, and remove from heat.
5. Spread the date mixture over the base, and pat the remaining oat mixture on top.
6. Bake for 20 to 25 minutes or until top is golden brown.
