Cannabis Infused Chocolate Zucchini Bread

We are fully embracing all of the cozy foods, especially when they are as tasty as this Cannabis Infused Chocolate Zucchini Bread. Nothing like warming up a slice, smothering it in butter and curling up on a cloudy day. That sounds like perfection to us.

This recipe makes two loaves, so it’s great when you want to keep something scrumptious in the freezer.

Infusion Method

One of the reasons we like infusing breads/loaves so much is that we get to make use of our cannabis infused cooking oil, which makes for an even dosage and full body high.

The amount of cannabis infused oil you use depends on your individual tolerance level; be sure to test you batch of oil ahead of time to gauge its potency. As long as the total amount of oil used equals 1 cup, you can play with the ratio of cannabis infused to regular oil to suit your preferences!

Ingredients

• 3 medium eggs
• 2 cups sugar
• 1 cup oil (mix of cannabis infused oil and regular vegetable oil)
• 2 oz unsweetened chocolate, melted
• 1 tsp vanilla
• 2 cups grated zucchini, unpeeled
• 3 cups all-purpose flour
• 1 tsp salt
• 1 tsp cinnamon
• 1 tsp baking powder
• 1/2 tsp baking soda
• OPTIONAL 1 cup coarsely chopped nuts (I just add more chocolate chips!)

Directions

1. Preheat oven to 350′
2. Beat eggs until they are a mellow yellow colour.
3. Beat in sugar and oils.
4. Stir in melted chocolate, vanilla and zucchini.
5. Sift flour, salt, cinnamon, baking powder and baking soda into bowl. Add *optional* nuts. Mix until well combined.
6. Pour into two (2) greased loaf pans.
7. Bake for 1 hour at 350′.
8. Cool on racks for 15 minutes before serving!
